Organic Marsh mellows and gluten free Rice Krispy treats!

Busy with one of my C4C sidekicks finishing up some last minute details for the Created for Care women’s retreat next weekend!!! Along with 400 moms, volunteers, band and speakers–our total number for the weekend is 430!! It’s going to be a fun weekend!!! Here’s Christy and I finishing up some planning…


Check out my right eye?? Nice…it slowly is harder to keep as open as the left throughout the day…another one of my lovely ailments with whatever momma has going on:). I’m smiling and rollin’ with it people. This too shall pass. And if it doesn’t—I still have my left eye!

THEN…last week my kids wanted Rice Krispy treats and marshmallows. Y’all know how I feel about corn syrup filled marshmallows. SOOO–momma whipped up enough to enjoy and make gluten free Rice Krispy treats too:) YUMMO.

You can buy Gluten Free Rice Krispy at most grocery stores on the regular cereal aisle:) And to make it a little healthier you can whip up marshmallows like this:

You’ll need:

Ingredients
6 Tablespoons water
2 envelopes unflavored gelatin
1 cup agave nectar
1 tsp vanilla
1/4 tsp salt

1. Add water and 2 envelopes unflavored gelatin in pan and heat while stirring until dissolved.

2. Add nectar, vanilla and salt to pan and mix together. Heat until it begins to slightly boil.


(not all agave nectar is equal–this one is a good one though–and this is also what we use when we don’t have 100% maple syrup…we use this instead of syrup on our pancakes and waffles all the time…and the kids no longer know the difference:)

3. Add to mixer and allow it to mix 15-20 minutes or until mixture thickens.

If you are just making marshmallows–now you can add to a greased/floured glass dish. Divide marshmallows with knife dipped in water and allow to cool completely.

If you are making Rice Krispy treats;)…

YUMMY. Allow marshmallows to cool for about 5 minutes and then follow box directions:) OR you can just add Rice Krispy cereal until it is the consistency you like:). I didn’t measure (sorry!) I just kept adding until it looked right:) This is a bit more sticky than normal Rice Krispy treats–but I felt better about us all gobbling them up than the corn syrup filled marshmallows:)

Yes. That is Frankie baby in a dress. Parker was the king. Laney was the queen. They had a baby girl–and she grew up into a princess…named Frankie baby. Poor Frank. He is such a sport!
